Pancakes are glorious but they are a weekend affair and necessitate being seated. I make these more mobile little pikelets to be enjoyed during our midweek busyness. These gluten, grain and sugar free treats are delicious as a mid morning snack or even a breakfast on the go. Perfect as part of a work lunch too. There’s lot of good fats to keep you satiated and though they’re beautifully sweet there's not a single spoonful of sugar. 

I adored pikelets as a kid and while these are slightly different in texture. I get the same sense of happiness eating these with a thick spread of butter.
