This gorgeous salad is my latest wholefood column for Dish Magazine. I realised this morning I'd forgotten to share it on the blog and I couldn't let this mistake go unamended.
My spring detox salad will have you bouncing off the walls with health and vitality. It also tastes pretty darn fantastic. Nutrient rich kale is paired with raw cauliflower "rice", dates, broad beans, radish, avocado and lots of herbs. All dressed with a yummy maple syrup and lemon dressing and topped with crunchy turmeric toasted seeds. Loads and loads of deliciousness!
There is lots of scope to customise this salad to you own tastes. Oh and feel free to use frozen broad beans until the fresh ones appear. They are still tasty (and so so handy)
Spring is the perfect time to start loading up on fresh vegetables. This is a beautiful and delicious way to start.
