(GF) Mac n Cheese w/ soft fried onions & pistachio crumb topping

Macaroni and cheese was my absolute favourite dish when I was a kid. It was one of the first things I learnt how to make myself too. While it's not everyday dining for me these days, it is a comforting, indulgent and delicious meal I like to enjoy while curled up on the couch watching a movie. There is nothing better.

This version is inspired by NZ Cheese Month. The month of cheesy tributes and recipes is coming to an end and I think my version of this family favourite is a great way to wrap things up.

I've created a gluten free version of the original by using my favourite GF pasta as the base and tapioca flour as the thickener of the cheese sauce. Soft fried onions add a slightly more grown up flavour and the crunchy crumb on top is a combo of pistachio nuts and gluten free sourdough. It's delicious!

This is divine served with a generous grind of cracked black pepper and a lemony salad.

Gluten free mac n cheese w/ soft fried onions & pistachio crumb topping

Serve 4

2 tablespoons butter

3 tablespoons tapioca flour (could also use rice flour)

700 mls full fat milk

1 cup grated parmesan cheese

1 cup grated puhoi aged cheddar cheese

1.5 onions  - cut into fine rings

2 tablespoons olive oil

2 cups dried pasta - I used Ceres Organics Quinoa Spirals

3/4 cup breadcrumbs - I used homemade gluten free crumbs (made using GF sourdough from Bread & Butter)

1/2 cup shelled pistachio nuts

Additional grated cheese for topping.

Melt the butter in a saucepan over a medium heat. Add the tapioca flour and stir continuously for two minutes. Add the milk, raise the heat and whisk for five minutes while bubbling until thickened and smooth.

Remove from the heat and add the grated cheese and a generous seasoning of salt and pepper.

Heat olive in a saute pan. Add onions and gently fry for 8-10 minutes until translucent and tender. Stir through the cheese sauce.

Cook pasta according to packet instructions.

Place breadcrumbs and pistachios into a food processor or blender and blitz until the nuts are a coarse crumb.

Combine cooked pasta with cheese sauce and place in an oven safe dish. Top with crumb and additional cheese.

Heat oven to 180 degrees. Bake for 20 minutes until golden on top.

Serve with salad. Enjoy x
