Probiotic beauty smoothie w/ pumpkin seeds & coconut yoghurt

Happy Friday my wonderful friends. 

Over on my Instagram feed (if you don't already follow me  - come say hi) I have a popular weekly called Friday Favourites. Highlighting products I'm loving  and using in my kitchen. This week's product is the divine locally made coconut yoghurt from the clever kids at Raglan Coconut Yoghurt 

This rich and thick dairy free yoghurt is loaded with gut healthy probiotics and is the perfect addition to my favourite smoothie. I call this my beauty smoothie because this is full of skin loving ingredients. Pumpkin seeds are a great source of zinc - which is a seriously skin loving nutrient. They also have a surprisingly high amount of plant protein, at around 10 grams per 30 grams of seeds. Soak the seeds overnight beforehand to make sure the anti-nutrient coating that is on almost all nuts and seeds is broken down, making the goodness of the seeds more easily digestible. The soaking also softens the seeds so that they will break down easily in the blender creating a delicious creamy base. You'll get lots of essential and satiating good fats from hemp seed oil, almond butter and coconut yoghurt. Alkalinising baby greens ensure this is a beautiful, bright and healthy way to start your day.

Probiotic beauty smoothie

serves 1-2

1/4 cup pumpkin seeds - soaked in water overnight and rinsed.

1/2 cup coconut yoghurt (I used Raglan Coconut Yoghurt)

2 large handfuls green - I used baby red chard and spinach

1/2 frozen banana - cut into chunks (use a whole banana if you prefer more sweetness)

1 generous tablespoon almond butter - I always use Poppy and Olive

1 tablespoon hemp seed oil

1 cup water

Place all ingredients in a blender and run until the smoothie is very smooth. Add more water if you prefer a more liquid drink

Serve immediately.
