Brown rice, broadbean & mint falafels w/ creamy walnut sauce

My column this week for Dish Magazine is a tasty twist on falafel that is baked instead of fried and has a delicious crunch. Brown rice stands in beautifully for chickpeas and I use baby cos leaves instead of bread to keep it fresh and light. The walnut cream is a gorgeously rice and easy to prepare dairy free sauce.
