The weather in Auckland looks like it’s going to be pretty wet and cold all weekend - I’m so ready for the warmth of summer! A cosy weekend inside is the perfect time to do a little bit of simple cooking that will serve you well in the midst of a busy week. I'm calling these my weekend warrior recipes because they will arm you for the times when you need a little backup.

I always store these energy balls in the freezer. It means there is no rush to finish the batch and they stay fresh for months.

The soup is absolutely divine. Truly soul satisfying and nourishing with the added bonus of being dairy free and vegan. This recipe creates a very thick soup that can be thinned with a little extra stock as desired.
