Beetroot, walnut & goat cheese salad w/ grapefruit & olive oil dressing

This is my favourite beetroot salad. This afternoon I packed it up to take to a really fun picnic with friends. This warm weather we're having in Auckland is heavenly. It feels as though everyone is coming out of hibernation. I love knowing there is still a long stretch summer ahead of us.

For the salad I grate a couple of beetroot and 1-2 carrots. I add a small handful of sultanas and a big handful of chopped walnuts. The dressing is juice from 1/4 - 1/2 grapefruit and 3 Tbsp of olive oil. I toss through a handful of roughly chopped mint, top with chunks of goat cheese, sea salt and cracked pepper. Its perfection.
