This is the salad you need to start eating today. It's a gorgeous blend of sweet, earthy, raw and rich. Raw beetroot is the ideal ingredient to include in your diet when you're offsetting holiday indulgences (as I am). Best of all this salad takes mere minutes to make. I've been enjoying it with a baked sweet potato on the side for a super quick and delicious clean dinner.
Beetroot, apple & carrot salad w/ rich tahini dressing
2 medium beetroot - grated
2 medium carrots - grated
1 apple (unpeeled) - grated
2 generous Tbsp tahini
juice of 1 lemon
2 Tbsp black and white sesame seeds -plus more for garnish
Place all the grated ingredients into a bowl. Using your hand squeeze out some of the juice (into a glass so you can drink it!) You don't want to squeeze the salad totally dry, you are just trying to get rid of some of the excess liquid.
Add the tahini and stir through well.
Add the lemon juice and stir through.
Add a pinch or two of sea salt and the sesame seeds. Combine thoroughly.
Garnish with more sesame seeds just prior to serving.
Will last 24 hours covered in the fridge.
