Honey roasted carrot, miso & ginger dressing

This dressing is absolute heaven. You'll want to pour it on everything.

The roasted carrot, miso and ginger combine to make a sweet / savoury and ridiculously crave-able dressing that can fancy up even a simple bowl of steamed vegetables or salad. I've been making dreamy dinner bowls with crispy tofu, raw greens, steamed broccoli and lots of avocado.

2 medium or one large carrot 

2 Tbsp miso paste - potentially less if you're using a dark miso or more if using white miso

1/4 cup oil - I use a mild olive oil but any neutral oil will work

juice of one juicy lemon

2 tsp honey - one for roasting and one for blending with dressing (may not need all the honey if you use white miso)

1 tsp sesame oil

1 tsp finely grated ginger (more if you like)

1/2 - 3/4 cup water

Peel and roughly chop carrots. Drizzle with oil and 1 tsp of honey. Roast until golden and tender.

(Prepare this dressing in a blender or use a hand held blender. I use my hand held blender as it's pretty grunty and makes the dressing lovely and smooth.)

Blend all ingredients until smooth and creamy. Start with 1/2 a cup of water and add more slowly till you get a thick but pourable texture. The dressing will thicken more once chilled so you may need to add a little water before serving to get a good pouring consistency.
