Hello weekend. I am so happy to see you! We are cosying up this morning with a big batch of pancakes, some good music and staying in our pyjamas just a little too long. I'm putting aside that annoying to-do list for a few hours to just veg out with my little family and eat a yummy breakfast. Often during the week there's barely time to enjoy a meal together. I really relish the slower pace of a winter weekend morning.

This is my favourite buckwheat pancake recipe. It's incredibly easy and 100% good for you. No sugar is added at all - I use only one ripe banana to sweeten (and its plenty sweet). 

Instead of sugary syrup we have accompany the pancakes with honey sweetened greek yoghurt, fruit and "sprinkles" for toddler Bonnie - sesame seeds and shredded coconut. 

You can easily double (or triple) for a crowd. Have a beautiful weekend. Kelly xx

Buckwheat pancakes w/banana & vanilla

2 large free range eggs

1 very ripe banana (spotty is good!)

1 tsp vanilla extract (i use Heilala vanilla)

2 rounded dessertspoons of buckwheat flour

1 teaspoon gluten free baking powder

Coconut milk to thin  — approx. 1/8 cup (could use any milk of choice)

Butter, ghee or coconut oil for frying

Place all the ingredients into a blender and blitz until you have a smooth batter.

Fry spoonfuls of batter in a frypan over a medium heat. Do not make the pancakes too large as the batter is fairly delicate. Watch the heat carefully as they will burn quickly. Reduce if necessary.

Serve immediately.
