Cacao & orange chia mousse

I'm excited to share this recipe with you. It's been a favourite of mine for ages and I've been meaning to pop it on the blog. As I write this, I've just realised our second child will be here in about 11 weeks. Eek. We are insanely excited but totally unprepared. We are renovating parts of our house and it's absolute chaos. It might be our way of nesting. Baby will only like our home if we pull up the carpets and polish the wood floors and repaint right? Ha. I have this need to make everything perfect for when this little babe arrives.

It's fitting that I'm sharing this delicious mousse today. Early on in my pregnancy I was really, REALLY struggling with nausea and would have some of it in the fridge most the time. Sometimes a few spoonfuls of it were all I could manage in the morning. The abundance of healthy fats means it's filling and sustaining in the way you want - with no sugar crash.

Orange's have been an obsession of mine this pregnancy too. Perhaps my body was crying out for more vitamin c? I don't know the reason but I spent a lot of the first trimester eating piles and piles of oranges. I honestly couldn't get enough. My 4 1/2 yr old daughter thought it was amazing (and hilarious). The zest is lovely in this dessert. Partnering nicely with the slight bitterness of cacao.

Top it with whatever takes your fancy. Fresh figs, blueberries and bee pollen are favourites of mine.

Cacao & orange chia mousse

400mls coconut cream

1/3 cup (50g) chia seeds (I used Bio Balance)

¼ cup (60ml) pure maple syrup or raw honey

2 1/2 tablespoons raw cacao powder (I used Bio Balance)

1 teaspoon good quality vanilla essence

Pinch salt

Zest of 1 orange

To serve: fresh fruit, edible flowers or bee pollen (optional)

Place all ingredients (excpet orange zest) in a blender (I use my Vitamix). Blitz for several minutes until silky smooth. Add the orange zest and pulse briefly to mix through.

Place in a fridge for at least one hour to chill and firm up.

Will last up to 4 days in an airtight container in the fridge.
