Cacao & orange chia mousse

400mls coconut cream

1/3 cup (50g) chia seeds

¼ cup (60ml) pure maple syrup or raw honey

2 1/2 tablespoons raw cacao powder

1 teaspoon good quality vanilla essence

Pinch salt

Zest of 1 orange

To serve: fresh fruit, edible flowers or bee pollen (optional)

Place all ingredients (excpet orange zest) in a blender (I use my Vitamix). Blitz for several minutes until silky smooth. Add the orange zest and pulse briefly to mix through.

Place in a fridge for at least one hour to chill and firm up.

Will last up to 4 days in an airtight container in the fridge.
