Baked banana and oat bliss bites with choc chips and cranberries
These delicious vegan (nut free!) baked bliss bites are great for lunchboxes. My big girl is back at school so I’m on that lunchbox treadmill again. Sometimes it can get tricky to think of new things to keep it interesting and she and I both love it when inspiration strikes and we can create something new and delicious to pop in there for her.

Baked banana, cranberry and oat bliss bites
Makes 14 balls
1 ripe All Good fair trade Bananas – mashed
1 ½ cups rolled oats
¼ cup sugar (any type will work)
2 tablespoons chia seeds
¼ cup melted coconut oil
1/3 cup dairy free chocolate chips
½ cup dried cranberries
Preheat oven to 180 degrees celsius
Combine the banana, rolled oats, sugar, chia seeds and coconut oil in a large bowl. Use a fork to mash it all together until very well mixed. Add in the chocolate chips and cranberries and mix until evenly dispersed.
Use wet hands (this makes it much easier!) to form heaped tablespoons of mixture into balls. Place onto a lined oven proof tray. Bake for 15-18 minutes, until lightly golden.
Allow to cool completely before storing in an airtight container for up to 5 days. Will freeze well for up to 2 months.
