It's so awesome being reminded by Bonnie Delicious readers about recipes I've not made in a while. Quite a few people have been making my banana and coconut loaf recently so I was inspired to make a loaf for a friend who's just had a baby. I think food gifts are always the best for new mums and dads. Especially things that can be eaten with just one hand while you're busy figuring out how to be a parent!
This is a yummy comforting morning tea or breakfast option. It's gluten and grain free (plus really easy to make) and though it uses only ripe bananas and only 1 tablespoon of honey instead of any refined sugar, it's gorgeously sweet and satisfying.
