Gluten free pumpkin & ginger tea loaf

This morning on the blog I'm sharing a recipe I first published a year ago on the (then pretty new) blog. This nutrient dense and ridiculously yummy loaf is a perfect little piece of morning or afternoon tea happiness.

The pumpkin gives a lovely brightness and the warming spices add a beautiful fullness of flavour. The recipe is dairy, gluten and refined sugar free and is paleo friendly. It's also a great one for kids. It's excellent toasted!

I remember writing this recipe a year ago and feeling filled with spring positivity. I'm happy to say I'm feeling the same way as I push post on this. I love the hopefulness that spring brings. The weather is still pretty chaotic here in Auckland but you just know that blue skys and beach days are almost here. There's a lovely sense of anticipation.
