My wholesome version of a classic shepherds pie is the absolute epitome of comfort food. My partner has declared this to be his favourite recipe of late. It's utterly perfect for this recent round of chilly (though beautiful) weather. A guaranteed crowd pleaser for vegetarians and meat eaters alike.
This is a great recipe to add into regular rotation on your household as it's really flexible - feel free to add in whatever vegetables you have on hand. Leftover lentils will freeze brilliantly and you can make opt to make one large pie of several smaller ones.
