Gorgeous salads and some changes ahead

We're almost there! I've pretty much finished working for the year and Luke will wrap up things today. I just love the feeling of everything winding down and prepping for a 3 week break. Heaven! 

Firstly, I wanted to share my favourite summer salads with you. Your Christmas and holiday table might just look even more delicious with the edition of these tasty and healthy dishes.

Secondly, I wanted to share with you all that these are the last days of Bonnie Delicious. Don't worry! My recipes and I are not going anywhere but the new year will bring with it a new name and logo, plus a whole lot of excitement about all that 2017 holds - including my first cookbook 'Wholehearted'. I can't wait! The name Bonnie Delicious has been so precious to me. Named after my new baby girl 4 years ago when I first took the plunge and embarked on this journey. The time feels right to change things up a little and have the blog name reflect where that journey has taken me.

Masala Roast Potatoes, slow roasted tomatoes, avocado & asparagus salad

I adore the hot and cold contrast of warm spiced roast potatoes with a crisp, cool salad. The tomatoes are slow roasted until they are raisin-y sweet. This dish would work beautifully as part of a shared feast or alongside your chosen protein on Christmas Day. You'll find the recipe HERE

Sautéed buckwheat, kale, raisins & pine nuts w/ creamy hummus

This Middle Eastern inspired warm dish is beautifully versatile and simply delicious. It would make a lovely change from traditional carbohydrate options on Christmas Day and is a wonderful dish to whip up while you're away on holiday. Quinoa, cherry tomatoes, corn & buffalo mozzarella salad

Summer on a plate! All the bright and beautiful ingredients that make the season such a pleasure, are represented here. Use the best quality mozzarella you can find. I find it hard to go past Clevdon buffalo mozzarella. A gorgeous olive will make a difference too. Once asparagus season is over, you can use thin slivers of raw zucchini instead. Roasted peach, fennel, goat cheese, rocket & blueberry salad

The arrival of berry and stonefruit season is cause for real celebration in my household. I just adore all the ways you can use these luscious fruit. Here I've roasted the peaches to add a soft caramel flavour. The aniseed notes of raw fennel, salty goat feta  and peppery rocket leaves balance this salad perfectly. It would be delicious alongside coal roasted meat, such as lamb or with good quality sausages. You'll find the recipe HERE.

Aspragus, avocado and paprika rye croutons w/ yoghurt & tahini dressing

Rye bread makes the most delicious croutons. Sprinkled with hot smoked paprika prior to baking, they have a gentle heat that works perfectly with the soft boiled eggs and yoghurt tahini dressing. I love this salad for both brunch and dinner. You'll find the recipe HERE.

Cumin cauli rice and chickpeas w/ avocado, radish & edamame

This nutritious and light dish is a lovely lower carbohydrate way to replace those heavy items on your Christmas table. Crisp and peppery radish makes a lovely contrast to the lightly spiced and sautéed cauliflower 'rice'. Edamame beans add lots of protein and have a sweet taste I adore. You'll find the recipe HERE.

Moroccan carrot, quinoa & chickpea salad

This dish brings a gorgeous blend of textures and favours. Loaded with herbs, citrus, sweet medjool dates and nutritious quinoa. Warm spices are wonderful for our health and digestion. This is a great non-traditional addition to your Christmas Day feasting. You'll find the recipe HERE.
