This nutritious salad is filling and full of bright flavours. You can serve it warm or at room temperature. Though a tad non-traditional, it would be wonderful on your Christmas table.
I love this as a stand alone dish (hello delicious work lunch and easy dinner), though it’ll also sing with the addition of grilled halloumi or bbq’d seafood.
